While I’m generally not a big fan of spending my time in the kitchen, sometimes it’s a necessity. And most of the time it goes pretty well. I’m no gourmet chef, but I can generally whip up a few things that are pretty good. One exception though: cookies. I don’t know what it is but since I got married (almost seven years ago) I can’t make a good batch of cookies. Like, it’s a running joke now with my husband that if I attempt homemade cookies, they’re going to be awful. What gives?
Actually, I know what gives. I’m always out of at least one of the ingredients needed for a recipe so I have to try to substitute or find a recipe using what I have. (While proper planning would help me out, when I’m in the mood to be in the kitchen I’ve got to act fast because it’s a fleeting moment for sure!) I had about sworn off any further attempts when a friend gave me her peanut butter cookie recipe. With just three (yes, THREE) ingredients I always have on hand, I figured I didn’t have much to lose! And, guess what? They were super easy AND super delicious!
Easy Peanut Butter Cookies
Ingredients:
- 1 C Peanut Butter
- 1 egg
- 1 C Sugar
- Hershey Kisses (optional)
Pre-heat the oven to 350°. Beat peanut butter, egg and sugar together. (Yep, it’s that easy.) Roll into balls (mine were about the size of a tablespoon) and drop onto a cookie sheet. Bake for 6-10 minutes until they barely start to brown. Remove from oven. If you plan to add chocolate kisses go for it just as soon as they are out of the oven! Let the cookies cool for a few minutes before moving to a cooling rack. Enjoy!
