My husband’s family first introduced these mini delights to me, and it was love at first bite. When we were still dating, my husband and I often made these cookies together in my dinky little kitchen. While we always managed to have fun baking them, the best part was eating them of course.
I believe these cookies might contain magical falling-in-love properties, as my husband and I survived the long distance portion of our relationship and have now been happily married for almost ten years, all while indulging in these bites of pink deliciousness a few times a year.
I think we can all agree there is no such thing as too much romance in the world, so the time has come, my friends, to share with you the scrumptious Pink Party Cookies cookie recipe. They may just help you fall in love all over again.
Pink Party Cookies
Cookie Ingredients:
- ¾ Cups Softened Butter
- ¼ Cup Crisco
- ½ Cup Powdered Sugar
- 2 Cups White Flour
- ½ Teaspoon Vanilla Extract
Pink Cherry Icing:
- Powdered sugar
- Cherry juice (drained from a jar of maraschino cherries)
- Almond extract to taste
[Note: The icing is not an exact science. Simply mix small amounts of these ingredients to taste and add in the powdered sugar to help it gain a thick consistency].
Icing Steps:

Icing Ingredients: Almond Extract, Maraschino Cherry juice, powdered sugar. Mix to taste and to a spreadable consistency.

Kids love to help with the stirring process!

Stir in powdered sugar until the icing is a thick but spreadable consistency.
Cookie Steps:

Everything you’ll need to make the shortbread cookies.
1. Mix all of the cookie ingredients in a large bowl until combined.

2. Stir all of the cookie ingredients in one bowl. Stir until well-combined and a soft dough forms. Little hands enjoy helping.
3. Roll dough into small, one inch balls and flatten with fork.

4. Use a fork to gently press and slightly flatten the dough balls.
5. Bake cookies on a greased cookie sheet for 10 minutes at 325 degrees.
6. When cookies are cool, put them together sandwich-style with the pink cherry icing.

7. After the cookies cool, spread the icing on them to make the “sandwiches.”

Voila! The finished product. Wouldn’t these also be great for Valentine’s Day? Yum!
Yield: Approximately 14 mini-sandwich cookies.

So happy to find this! I grew up in Minnesota too, and my mom made pink party cookies too. I recently lost the recipe, so THANK YOU for posting it. The only thing different in our recipe is my mom added butter to the icing. I think it is the almond flavoring that really makes this special.
