Spring has taken its time to arrive this year. This means everything from our snow boots to our winter mentalities have stayed longer than intended. When the warmth hits, our brains tell us to store away the cold, and breathe in the fresh and new.

While we get ready to make end of the school year plans, and graduate to summer vacations, lets not retire those meal menus just yet. Once the temperatures start rising, it might be time to retire the oven and work towards easier recipes.

But before that happens, lets pay one, last, homage to our oven for the season. Before we officially say goodbye. If you’re still hankering for some cold weather meals, here are four one pan meals to bake for dinner. That is, until Mother Nature really tells us to hit the brakes.

This easy recipe is simple to make and can be cooked all right in one casserole dish meaning faster cook times and less messy prep work. Just add chicken to your dish, pour BBQ sauce over, and add heaping amounts of cheese. Then bake until ready.

Summer nights out at your favorite Mexican spot are always fun. Summer nights having a Mexican themed dinner inside? Not as desirable. Which is why you should make some tasty chicken enchiladas ASAP.

3. Turkey Shepherds Pie

Technically this is one of those one dish meals that does require some cooking ahead of time. Once you have the ground turkey and the mashed potatoes ready, the remaining ingredients can all be added to your casserole dish and then promptly baked.

4. Baked Chicken Spinach Parmigiana
